For this wine fruit is selected from maturvines, and after fermentation, the wine spends 15 months in American and French oak before release. Best allowed to breathe after opening.&amp;#160; Grown on Jim and Pam Lambert’s estate vineyard, this Shiraz saw all the attention that an individual Family Vineyard could receive.&amp;#160; The grapes were fermented for a prolonged period of time before being gently pressed and transferred to new American Oak Hogshead that had previously been air dried for 3 years in Australian conditions to allow the oak tannins to soften.&amp;#160; During ageing, the wine was periodically allowed to “breathe” to enhance the flavours of the fruit and integrate the acids. Matured in new American oak for 15 months then bottled and allowed to rest.&amp;#160; Rich in fruit with velvety tannins and a lingering soft finish. Best allowed to breathe after opening.&amp;#160; Grown on Jim and Pam Lambert’s estate vineyard, this Shiraz saw all the attention that an individual Family Vineyard could receive.&amp;#160; The grapes were fermented for a prolonged period of time before being gently pressed and transferred to new American Oak Hogshead that had previously been air dried for 3 years in Australian conditions to allow the oak tannins to soften.&amp;#160; During ageing, the wine was periodically allowed to “breathe” to enhance the flavours of the fruit and integrate the acids.
