These two varieties were both hand harvested at different stages of maturity. The Chardonnay, picked in early February, was slightly green with high acid levels, and the Viognier was picked in March at full maturity. Only the very light free run juice was kept and then cold fermented for 10 weeks to showcase the freshness and characters of the varieties including fresh pears and apricots. A great wine for celebrations!
